These cheesy mince muffin cups are easy, filling and packed with protein. They’re great as a meal with a simple salad, and delicious on their own as a snack.
I usually make them with beef mince, but other types of meat will work too – chicken, pork, lamb etc.
I always batch cook and freeze them so we’re never caught out – they reheat really well (in the air fryer, microwave or oven). Having food like this handy helps prevent blow-outs when you’re too tired, frazzled or time-poor to cook.
Cheesy Mince Cups
Makes: 12 | Total time: 45 min
Per serve (approx.): 2g carbs | 16g protein | 8g fat | 600kJ
Ingredients
- 1 tbsp ghee or oil of choice
- 100g onion, finely diced (about 1 small onion)
- 2 garlic cloves, minced
- 500g beef mince
- 3-4 mushroom cups, finely diced (approx. 1 cup)
- 1 small red capsicum, finely diced (approx. ¾ cup)
- ½ tsp smoked paprika
- ½ tsp dried oregano
- ½ tsp dried basil
- ¼ tsp salt
- ¼ tsp pepper
- ¼ tsp chilli powder
- 3 large eggs
- 65g tomato paste
- 200g cheddar cheese, grated

Method
- Preheat the oven to 180°C and prepare a 12-hole muffin tray.
- Heat the ghee or oil in a frying pan over medium heat. Add the onion and garlic and cook until softened.
- Add the mince, mushrooms, capsicum and spices. Cook, breaking up the mince, until the meat is browned and the vegetables have softened.
- Remove from heat and allow the mixture to cool slightly.
- In a large bowl, whisk the eggs and tomato paste until smooth, then stir through the cheese.
- Add the mince mixture to the bowl and mix until well combined.
- Divide the mixture evenly between the muffin holes, filling each about three-quarters full. Bake for 20-25 minutes, or until set and lightly golden on top.
- Allow to cool in the tray briefly, then transfer to a wire rack to cool completely.
Recipe Notes
Once cooled, store in an airtight container in the fridge, or freeze for longer storage.
Can also be baked as one quiche-style dish; slice into 12 portions.
